Ingredients:

    Oringi mushrooms (or other mushrooms such as shiitake mushrooms, oyster mushrooms, or straw mushrooms)
        30 red and bird’s eye chilies
       5-8 cloves of garlic
        2 tablespoons palm sugar
        2 1/2 tablespoons fish sauce
        1/2 tablespoon vinegar
        2 tablespoons lime juice (taste before adding more) Can be increased or decreased)
        A few coriander stems and coriander leaves, finely chopped.

How to make:

        1. Clean the prepared mushrooms, cut into bite-sized pieces, skewer and grill on a charcoal stove or in the oven. Grill until cooked, set aside.
        2. Pound both types of chili and garlic together until fine. Add palm sugar and grind until fine. Add fish sauce and vinegar (taste to make sure it is spicy, sour, salty and a little sweet. If it is not sour enough, you can add more lime juice). Finally, add chopped coriander and mix well. Serve with the prepared mushrooms. 

Note: Adding vinegar is to let the sour taste linger on your tongue before the lime that follows to make it mellow. The taste will be spicier. If you don’t like it, you can leave it out and just add lime juice.
